Ok, this I found hilarious. Serious Eats, one of my favorite websites for recipes and learning how to actually cook, posted a recipe for cheese sauce using Alka-Seltzer. Given the large aspirin warning at the top of the recipe, and the potential for real harm if you ignore that warning, I think I'll stick with using sodium citrate, but if you're in a pinch and need some nachos, this is quite the trick.
